Veronica Limeberry is the newest AmeriCorps Vista member with the Appalachian RC&D. She is serving with the Appalachian Coal Country Team as the Community Development Coordinator for the all-new local foods project hosted in partnership between the ARC&D and Jonesborough Locally Grown. Veronica, a native to Asheville, North Carolina, has lived in Johnson City for the past nine years and received both her undergraduate and graduate (pending) degrees at East Tennessee State University. She has worked with the United Nations, farmers around the world, and local farmers in Appalachia to support local agriculture. In 2012 Veronica co-founded the local non-profit Build It Up East Tennessee to work with community members to foster stronger local food networks. Throughout the next year, she will be working with local organizations, businesses, growers, and anyone else interested in supporting local agriculture to create a strong local food hub that supports increased markets for producers and better access to local food for consumers. In addition, Veronica is also assisting in the grand opening of the soon-to-come Boone Street Market year-round farm store that will be located in downtown Jonesborough.
